Cousin Tammy’s Best Broccoli and Cheese Casserole 

Ingredients:

I doubled this recipe to make a large portion for Thanksgiving. 

1 cup water 

1/2 tsp salt

1 cup instant rice 

1/4 cup butter 

1/4 cup onion, chopped 

1/4 cup celery chopped (I did not add celery) 

1 can cream of mushroom soup undiluted 

1 can cream of celery soup undiluted 

1 pkg frozen chopped broccoli thawed 

1/2 cup diced processed American cheese 

Instructions:

Bring water and salt to a boil.

Add rice, cover, and remove from heat. Let sit 5 minutes.

Melt butter in skillet; sauté onion and celery until tender. 

In a large mixing bowl combine rice, celery, and onion with remaining ingredients. 

Pour in a greased 1-1/2-quart casserole dish and bake at 350 degrees for 1 hour. (Single recipe yields 6 servings).
